Why websites change on different screens

The point is that there are a lot of different types of screens out there and a lot of different ways people can access your website. The best thing to do is design the website to cater for the most commonly used screen size and make sure that if it's viewed on small screens or on widescreen, that it still works enough for people to navigate and find the information. You cannot cater for everyone in website design, there are too many variations, but if you look at the statistics below it shows you that 96% of people are on a decent screen size (1024 x 768 pixels). As the years have gone by and technology advances, screens have been getting consistently bigger on average in the last 10 years.
